A Day On My Plate

A blogger fave of mine, Megan from detoxinista.com, writes regular posts entitled; What I Ate, where she shares photos and explanations of what she’s eating lately. I find it weirdly fascinating to take a glimpse at someone else’s nutrition habits. I’m guessing this strange interest is what makes me cut out to be a nutritionist.

Anyhoo, I thought that maybe I’d start a similar sort of series of posts. Just every so often – to give some examples of days that are enjoyable and tick all the boxes  (nutritionally speaking). I’m not always what you’d call perfect but I do try my best to keep things colourful and nutrient-dense, whilst keeping in line with my need for easy-to-digest options. I’m still recovering from autoimmune-induced liver cirrhosis.

Let’s take a look at a typical day for me at the moment …

Breakfast – I love my morning smoothie, a winning combo of spinach, raw cacao powder, spirulina, green leaf stevia, coconut water and filtered rain water ice cubes. It never fails to hit the spot and is super-hydrating after my daily beach jog. I usually sip on this while checking emails, working on content for the blog, brainstorming anecdotes for my autobiography, or simply having a good old chin-wag with the fam bam

Lunch – I try to get to a gym class most mornings if I’m able, so by lunch I am one keen caterpillar! My favourite option at the moment is a massive (we’re talking like 2 cups worth) of steamed butternut pumpkin (I cook it in a saucepan in filtered rain water and then drain and drink the cooking liquid … it’s like hot pumpkin juice, weirdly delish) mashed with about 1/3 cup pure coconut cream, 1/4 teaspoon seaweed salt  with 1 heaped teaspoon (and I mean HEAPED) of my changing habits probiotic powder stirred through. I love the earthy saltiness of the probiotic powder combined with the sweet creaminess of the pumpkin. It’s like a thick soup but better I reckon. Here’s the exact recipe if you’re interested.

Snack – I’m not always in the mood for a snack, it just depends on how my metabolism is travelling on a given day. If I do feel like a bit of a peck, I’ve always got a stash of organic frozen blueberries in the freezer. I try to buy fresh ones at the supermarket when they’re on special and then freeze them (because nothing beats the plump fresh variety), but I’ve always got a bag of the organic frozen wild blueberries too (just in case). I am in love with the creamy sweetness of frozen berries – it’s like eating blueberry ice-cream (I shitzu not!).

Dinner – I am overjoyed (and that’s an understatement) to be tolerating olive oil again! After my gallbladder troubles of 2016, I’d been left fearing this beautiful food, as it seemed to bring on attacks. I reintroduced it Sunday a week ago and it’s going down a treat now. To celebrate, I’m back to my old fave combo of steamed broccoli, olive oil, seaweed salt, pepper and now, with the anti-inflammatory addition of organic turmeric powder. It’s a great “starter” (to be followed by something equally as fabulous) or side dish paired with some crispy salmon or slow-cooked ox tail if you love your animal proteins (like I did pre-gallbladder distress).

Dessert – It’s more of a “continuation” of dinner, I couldn’t just have greens and oil now could I? My fave combo for the past month or so has been ripe organic bananas (oh my affection  for the humble banana … insert love-heart-eye-emoji here) sliced into coins and served with inca inchi butter (like peanut butter but BETTER!!!). I love how this gives me the complete protein and essential fatty acids that I need, but without stressing my gallbladder out.

As you can see, my diet is very much dictated by gallstone-attack-prevention at the moment, the stones are (to the best of my knowledge) getting smaller now, and so I’m not having to worry as much as I used to, but I’m still wisely conscious not to push the limits too soon.

Hopefully as I continue to heal, I’ll be able to start eating fish a bit more regularly (ocean trout come at me) and include eggs and coconut oil so that I can be reunited with my favo muffins!
