Real Soup for Names Sake

Oh hello there. You’ve found some very old content. Please read the disclaimer on this page before thinking I’m still a total sheep who has been sucked into a bone-broth worshipping fad diet. Been there, learned from that and am now a much less rigid human.

I received feedback the other day from a reader saying that she got excited when she discovered this blog; assuming it was a website dedicated entirely to soup! She was disappointed when she realised that soup, -although having a starring role on this site – is not my sole focus. After all, a blog dedicated entirely to soup sounds like a pretty good idea to me. Maybe I should have thought of that.

I know I manage to weave bone broth and blended vegetable soups into nearly every post, making the name ‘real soup for the real soul’  deliciously appropriate, but it’s usually in relation to a bigger topic such as last-minute meal ideas or GAPS.

Today I’m honouring the name sake of this site with a post dedicated to the ultimate soul food; real soup!


Why am I HOT for soup?

Quite simply; because it makes me feel so damn luscious! Well, that  and it tastes  shut the front door, can’t even handle the fabulousness, all that is right in this world, bowl and blender licking AMAZEBALLS!

Bone broth nourishes every single cell in the body, especially the ones lining the digestive tract. The soothing animal fats repair damage to the gut lining and provide the whole body with a sustainable energy. Broth is oozing with minerals and building blocks for hair, skin, teeth, nails and bones. The flavour of bone broth – particularly from heartier meats such as lamb and beef, is next to none; rich, slightly sweet and robustly tasty.

Bone broth is the basis of every soup I make and also the liquid I simmer vegetables in to serve with proteins. My favourite broth is made from beef marrow bones, filtered water and a splash of ACV (Apple Cider Vinegar).

You can use any bones you like – organic are preferable to avoid heavy metals or other toxins that are commonly stored in the animal bones, to make a broth.

Just keep in mind that the more connective tissue left on the bone, the richer, fattier and more flavoursome your soups will be. Be sure to keep any bone marrow, meat and soft connective tissue from around the bones – these (especially the tissue and marrow) are super-healing (and even better, super duper tasty) for the gut lining and whole body in general.

Basic broth 


  • 1 large beef marrow bone cut in half lengthways and then in half again so you have four long half bones each with a cavity full of marrow and a bulky ‘head’ of spongy bone
  • A splash of apple cider vinegar
  • Filtered water

Method

Throw the bones into your slow cooker. Splash over some apple cider vinegar and top with water so that the bones are just covered by liquid. Cook overnight or for 12 hours.

Notes


  • Never fear the golden fatty film on top of the broth, it’s rich in fatty-acid goodness and emulsifies when used in blended soups where it adds nourishing creaminess
  • You can also use lamb knuckles, a chicken or turkey carcass, ox tails, a leg of lamb etc.
  • If you want to drink the broth straight and can’t handle the fatty film on the surface, put the pot in the fridge. The fat will rise to the top and solidify. Scoop the fat off and reserve in a jar (this is called tallow; beef fat, and can be used as a cooking fat just like coconut oil or butter). You now have a mild, drinkable elixir that can be heated up at any time of the day or night as a delicious, warming drink.

Now that we’ve covered broths, lets move on to blended soups.

The meals that will change you life for the absolute better! “Now Rach…“, I hear you say, “…that is a BIG statement, surely a humble bowl of soup can’t be that significant“. Well sweet friends, I can only speak for myself, but blended soups have changed my life and there is no going back!

I’ve always loves soup. My mum is a spectacular cook and makes the best chicken and veggie soup I’ve had the pleasure of being served. Her carrot soup and mixed veggie soups are pretty flawless also, and I previously believed, when it came to soup, our family had pretty much nailed it. Oh how wrong I was.

So if you’re feeling run down, you’ve got an upset tummy or simply want to enhace your health, I have three action steps for you

1. Go and buy a slow cooker (unless you already have one, don’t go and buy another one – unless of course you’d like to). They aren’t expensive and are an invesment in your health (and a very cheap invesment at that)

2. On the way home from buying your slow cooker, stop off at the local butchers and pick up some grass fed beef marrow bones or any other meat on the bone that looks good. Friends that already have slow cookers, you’ll have to make a trip out to the butchers too.

3. Go home and make a batch of delicious, rich broth. Strip any fat, meat and tissue off the bones and reserve for meals and/or snacks. Also, if no one is around, have fun sucking the sweet, rich marrow from the bone cavities (you will look and sound a bit savage but it’s so worth it!). After the excitement of the bone marrow sucking expedition has worn off, chop up your favourite veggies, cook them up in some broth in a little saucepan and blend in a high speed blender on high for 15 or so seconds.
