I Can’t Believe it’s Not Double Cream (!) Creamy Cauliflower Soup

This soup is my favourite food in the entire world. At the moment.

LOOK HOW THICK AND VELVELTY IT IS!!!!!!!!! I AM WRITING IN CAPLOCKS BECAUSE THIS SOUP IS SOMETHING TO GET VERY ENTHUSED ABOUT!!!!!!!

Rich, velvety and creamy, this pseudo-cream can be thinned down for a more liquid ‘drinkable’ soup, or reduced down to form a thick and luscious puree or mash. Any which way it is totally delicious and well, the name kind of says it all … you won’t believe that it’s not just one big bowl of hot, thick, slightly oniony and garlicy cream.

I Can’t Believe it’s Not Double Cream Creamy Cauliflower Soup


  • 1 cup chopped cauliflower
  • 1 large onion, diced
  • 2 large cloves of garlic, peeled
  • 1/2 cup rich bone broth (or 1 heaped – and I mean heaped! – spoon of tallow, ghee, or butter and 1/2 cup of leaner broth)

Method

Start by peeling and chopping the onion and garlic. Add to a small saucepan along with fat (or 1/4 cup of the rich broth) and saute until golden and there is an overwhelmingly stunning aroma filling your nostrils (unless you have a cold or sinus issues – then have someone else in the kitchen with you that is the proud beholder of a ‘perfect nose’ – they can have the aroma-gasm for you).

When either you or your ‘perfect nose’ assistant is making remarks of delight and satisfaction and/or salivating all over the kitchen floor like Pavlov’s dog, you’ll know that it’s time to add the cauliflower.

Add the rest of the broth at the same time that you add the cauliflower and bring to the boil. Then bring down to a low heat and simmer with the lid on for 10 minutes.

After 10 minutes the cauliflower should be tender. Remove the lid and bring the heat back up to medium and simmer until most of the liquid is absorbed (but not completely dry – it really depends on how thick or thin you want it, personally I like it on the super-duper thick side).

Transfer the lot to a high speed blender or food processor and blend until smooth, thick and creamy.

Buon Appetite, enjoy – alone with a sprinkle of herb salt or as part of a meal with meat (or fish, eggs or legumes) and cooked veggies.

Notes

This is ridiculously good with some sauerkraut stirred in (or even just sauerkraut juice) for tang and probiotic goodness

I love the creamy, tangy and crunchy flavour combo of this soup and sauerkraut – match made in ‘whole foods heaven’.

Also went and brought the ingredients for the pumpkin soup and muffins. Anyway really enjoying all the great information you provide on your site. I have a lot of food intolerance’s and also a histamine intolerance (so no fermented food for me) but am enjoying these recipes as I can eat all of these foods. Thank you
