Spectacular Soul Saturday: Katie Hoodless

Katie is a friend of mine who made gradual, yet radical changes to her diet and lifestyle and reaped countless benefits for doing so.

Experiencing the changes herself has driven her to educate her community on how to live happier, healthier and more vibrantly – one baby step at a time.

Meet Katie …

Where did your open-minded adventure begin? Was there a significant event that shifted you into gear, or did your outlook on life simply shift over time?

I have gradually implemented changes, as I continue to educate myself and check in innately with myself I continue to change my ways.

What started me on a new way of thinking was waking up one morning and not being able to bear weight on my left side. After many months of medical tests and doctors visits I decided to take my own health into my own hands.

I also started listening to the Podcast ‘Up For A Chat’ with Carren Smith, Cyndi O’Meara and Kim Morrison (if you are not listening to them already I recommend it!) Everything they said made sense and I started to slowly implement and test their concepts and ideas, to great success in my life. I believe when the student is ready the teacher appears and these ladies appeared at the perfect time!

What drives your enthusiasm for self-care and optimism?

Knowing just how amazing I feel when I am social, nourish my body well and move! I live by the beach so waking up on the Sunshine Coast to the most stunning views of the water always make me want to get the most out of my day.

What keeps you goofy and ‘down-to-earth’?

I have quite a few tools in my tool box! From being around people, being outdoors, self care rituals, using essential oils, my sense of humor and my beautiful boyfriend John is always a great support to keep me grounded and talk things through with.

How do you keep exercise FUN?

My all time favorite is Obstacle Course Racing (OCR) a somewhat type of natural movement, balancing on falling trees that are over dams or mud pits, climbing uphill through thick bush using ropes, trail running, monkey bars and getting over walls in the middle of nowhere and just getting down and grubby in the mud!
I love running trail or road running.
I’ve just had surgery on my hip a few months ago so my favourite movement at the moment is walking, swimming / pool running and stretching.

When it comes to nutrition, what is your philosophy?

Everybody is their own body’s best expert. What one person thrives on another may not. The constant rule for my philosophy is to enjoy real food that has been grown in nature, not been made in a laboratory and if the real food is cooked with love it tastes even better! I also love my ferments; kimchi, sauerkraut etc. and consider them an essential part of my diet for digestive support and a healthy tummy.

How do you overcome limiting thoughts and rationalise negativity?

I subscribe to the theory that you should question everything, therefore everything is made up. So if everything is made up then I just made up a context that empowers me rather than dis-empowering me.
I catch limiting thoughts and will generally talk them over with John (beautiful supportive boyfriend) or I will do an inhalation with an essential oil saying affirmations.
I find what you resist persists, so I acknowledge limiting thoughts, I don’t judge them and then give them up so I don’t give them anymore energy.

Only you are uniquely you so be your own expert, do things at your own pace, your own way and check in with what feels right for you and act on what your body is telling you.

Think fast, what are you grateful for right now?

1) My health, my body really is brilliant.
2) My beautiful boyfriend John, my family and friends.
3) The beautiful home that we live in right at the beach with stunning views. John and I have a nurture theme for our home and it is just that!
4) That I can access beautiful fresh food whenever I want.
5) Twenty 8’s Essential Oils they are apart of my everyday life now and I couldn’t imagine life without them.

We call it …

Kate’s Eggs


Serves 2

  • 1/2 a Zucchini – Finely chopped
  • 2 Tomatoes – roughly chopped
  • 2 Handfuls of spinach
  • 4 Eggs
  • Thermomix stock concentrate 1 tbl or salt to taste
  • Pepper to taste
  • Broth – depends how soupy you like it I prefer my eggs swimming so I add about 250mls.

Method:
1) Add the zucchini and tomato to the frypan. Stir until soft.
2) Add the spinach, thermomix stock concentrate and pepper.
3) When the spinach is wilted crack the eggs over the veggie mixture in the pan. Break the yolks and scramble / mix the eggs and veggie mixture in the pan.
4) Turn the mixture over when the eggs turn white.
5) After a minute add the bone broth.
6) Once the mixture starts to steam it is ready to serve.
YUMM enjoy but be careful because it will be hot!

Variations


  • Above is the core ingredients but sometimes if things needs using in the fridge we have been known to spring onions, capsicum, mushrooms, any herbs, avocado or carrot. Any vegetable works!
  • You can omit the broth
  • I ate this for breakfast every morning minus the broth for two years when I first changed my diet.
